With National Food Day coming (a.k.a. Thanksgiving), I am thinking of new things to make.
Anyone care to share their recipes?
Here's one of my simple ones:
Deviled Eggs
12 eggs
1/2 cup Miracle Whip (Salad Dressing)
2 tbsp mustard
4 tbsp sweet relish
Sprinkle with paprika
Total time: 30 minutes- ish (including boiling)
CAUTION: MAY CONTAIN EGGS

Ok, here's one that I developed from my grandmother's Betty Crocker recipe:
Z's "cheater" mac and cheese
Prep = time to cook mac plus 10 minutes, then an hour bake. This is SUPER easy!
Ingredients:
Elbow macaroni 16 oz
butter - 1 stick
velveeta original - 8 oz block
1-2 jars alfredo sauce
2c +/- grated cheese for top
Aluminim foil
Lasagna pan (I use pyrex) - ungreased
Preheat oven to 375degF
Boil mac al dente, dump into ungreased lasagna pan. Add the following while mac is hot.
Top with blocks of velveeta
Pour over alfredo sauce (from jar)
Place butter in blocks over that
Sprinkle with grated cheese
Bake, covered w foil for 30 minutes (Use whatever trick you like to keep foil from sticking to the gooey cheese on top). Remove foil and bake another 15-30 minutes until desired browning of the top. Let sit10 minutes, then cut and serve.
I do NOT recommend making ahead and baking from cold. It simply does not turn out as well. I prefer to bake it first, then reheat in the microwave, later.
Infinite variations if you add seasonings, try different pastas or cheeses.
Here is another vegetarian recipe.
Carrot Pumpkin Spice Low Fat Vegan Muffins
Makes 12 muffins
Dry ingredients:
1 & 3/4 cup stone ground whole wheat flour (or spelt, kamut, oat etc.)
1/4 cup cane sugar
1 tbsp ground chia seed
1 tsp baking powder
3/4 tsp baking soda
2 tsp ground ceylon cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1/2 tsp salt
Wet ingredients:
1/2 cup maple syrup
1 cup canned pumpkin (or fresh cooked, mashed)
1/4 cup water
2 tsp vanilla extract
1 1/2 cups grated carrot (3 medium ones or 2 large )
1/2 cup raisins
1/3 cup chopped walnuts *optional
Directions:
I adapted several online recipes to make this one. When I was eating vegetarian, this was a favortie thing to make. It may not exactly say "Thanksgiving", but the vegetarians might like it as somethign to keep in the fridge and warm up during the cold winter months.
Sweet Potato Chili (Vegan)
Serves: 8-10
Extraordinary vegetarian chili containing sweet potatoes, black and pinto beans, peppers and cocoa powder. A wonderfully delicious, hearty & healthy vegan meal.
Ingredients
• 1 large red onion, chopped
• 1 green bell pepper, chopped
• 2 red bell pepper, chopped
• 2 medium sweet potato, peeled and cut into 1?2-inch pieces
• 5 garlic cloves, chopped, or 1 heaping tablespoon of minced garlic
• 1 tablespoon chili powder
• 11/2 teaspoon ground cumin
• 1 ½ teaspoon cayenne pepper (2 teaspoons unsweetened cocoa powder
• 2 teaspoons ground cinnamon
• 2 teaspoons unsweetened baking chocolate powder
• ground sea salt and black pepper
• Two 15-ounces canned diced tomatoes, including the liquid*
• One 15-ounce can tomato sauce
• 1 can black beans, rinsed and drained
• 1 can pinto beans, rinsed and draned
• 1 can kidney beans, rinsed and drained
• 2 small cans of mushrooms
• 1 cup frozen corn
• about 2 cups OR one 14 oz. can vegetable broth
• ½ cup fresh chopped cilantro
• Jalapeno chilies to taste (optional)
• garnishes: sour cream, (optional)
• garnish chopped green onions (optional)

@silvereyes, yay for Miracle Whip and sweet relish, as I prefer those to mayo and dill anything. lol
I like to try variations on recipes. For this, I wonder how smoked paprika would do. @bingst
I don't have the actual recipe, i have never made it myself, but my Dad used to make mashed sweet potatoes (or yams), and added in crushed pineapple with a little of the juice, some Jack Daniels mixed in for flavor, and marshmallows added on top for the last few minutes of cooking. He would always cook them until the alcohol in the JD was burned off. If someone wanted to experiment with this idea and figure out the cooking times and proportions, go for it.
