Shooting the bull: Why do we shoot the bull instead of the elephant?

Skyping with a German friend today. Trying to explain what we Americans mean when we talk about shooting the bull. German's say like an elephant in a china shop, instead of like a bull. My mind starting making connections.

Where I'm from we shoot the shit

Right now I like the elephant as it fits our present circumstances better. I'll try to remember the German rendition.

Do you have any idea where the phrase 'shouting the bull' came from? I'm one of those lazy ones that hasn't done his research.
