I caught a tuna once on a fishing trip. The thing bled like a cow when I cut it open! I guess they gutted this before shipping it. Mine was only about 2 foot long, so I didn't need a Samurai sword to fillet it either
The guts rot a lot faster than the meat so most fish are shipped gutted. Other cultures are less squeamish and serve fish with the head on or use them for stock.
