@whispers it's just the picking style with out going into to much detail, The clawhammer style is a very old way to play where the player strikes the strings and strums with usually one finger and the hand is kind of curled into what looks like a claw. Then in the 40s (I think) Earl Scruggs developed a 3 finger roll that became bluegrass style of picking. Clawhammer is more of a "Old Time" music style while the Scruggs style is more bluegrass.and then Jazz banjo is mostly picked with a flat pick. There are exceptions to every rule but that is the the short answer.
@whispers you should check out Abigail Washburn. She is amazing clawhammer and her husband is Bella Fleck. This link goes right to the video page on her site. Her and Bella have a Tiny Desk video and you will see both styles of picking.
