I made a crust less tomato pie today with homegrown heirloom tomatoes and 3...count them...3 cheeses! A spicy habanero, extra sharp cheddar, and an aged Gouda. I was surprised by the Gouda. I mistakenly picked it up, was looking for gruyere, and in my state of vacation delirium got the aged Gouda instead. Sigh, my life is fraught with difficulties. So, here’s the finished product! Ta Da!
