Sadly, I had no mushrooms in my refrigerator otherwise I would have used them too. Can't beat mushrooms in butter.

Right now, I have to eat what my body allows (I'm treating intestinal cancer with tiny amounts of cannabis oil) and so far, I can eat one hard boiled egg a day, around noon, without negative consequences.
At least I can add salt to the water first.
But I keep improving and the kinds of food I can eat have been increasing.

You got my mouth watering When we had chickens I used to eat a half dozen sunny side up with grits ketchup and toast . We got rid of the chickens .
I could do that without the ketchup

I’ve the second dozen of (expensive) eggs ready to be tossed from my refrigerator.. I rarely eat eggs … but have found that if hungry enough, almost anything tastes good. Your dish sounds delicious, though. But if I ate like that, I’d be working twice as hard to burn it off
I agree with if hungry enough. I have eaten a few things that I shouldn't just because I was hungry and regretted it later. I don't think you would have to work too hard to burn off the food I made (look at me getting all defensive about my food lol) but seriously. The eggs were cooked with a minute amount of avocado oil, no salt added (the parm cheese supplied that) and everything else was in small quantities and quite healthy. Avocado's are good for the bod and metabolism. The bread could probably go, but in small doses it isn't too bad because it is sourdough, which means no sugar and the fermentation process (used when baking it) is great for digestion.
@patchoullijulie I was more thinking, I’d want more, and more ..then maybe finish up what’s left in that pan. No longer accustomed to fine eating, it’s prettymuch the basics for me. A great weight maintenance plan, one must really be hungry to eat one of my meals
@Varn Oh right. gotcha ...well there is always that, you know the when do I stop part. I have issues with that also especially when it comes to chocolate. I have no brakes where chocolate is concerned.
