SRIRACHA SCHMIRACHA!
Calling all experts..........

A couple of my work friends and I went out to Thai dinner last night to a local restaurant that has the best food. It is always tasty and consistent. One of my friends, who was skeptical about the my claims was smitten at first bite.
So can someone tell me why, as he continued to rave about how great the food was, did he drown it in Sriracha and or sweet chili sauces?
I don't get it. In my experience chili all but kills the taste buds so how would they know what the food actually tastes like?
Can some chili aficionados clue me in?

I love hot dishes and it's not at all surprising if I've got sweat dripping into my eyes during a meal that I'm thoroughly enjoying. That said, if it's a seafood or mango stir fry, I'll never dial up the heat as far. Just seems like some combinations support the heat better than others. As much as I like that heat, though, there still has to be flavor and if it's being over-powered by chiles, I just won't enjoy it as much. There's an Indian dish called Phaal which is almost exclusively chicken, onion & chiles. There's plenty of heat & texture, but no flavor.

I have never heard of Phaal and I love Indian food. 😀

@patchoullijulie One of my favorite dishes is vindaloo, so when I heard about phaal, I had to try it. It's probably just the recipe I used that wasn't very good

@chalupacabre When I eat vindaloo I make sure I have plenty of steamed basmati, cucumber raita and naan. Shoot, now I'm craving Indian food. 😕

Since I moved to Thailand in 2010 I have always asked the food vendors how hot the seasoning is, and only take food with the milder seasoning. But I must have become hooked on it somehow because when I try to eat unseasoned food I tend to take a bite of Thai "peek thai" peppers before each bite of food.

Strangely, since I got intestinal cancer in 2016-I've been treating it and slowly improving with tiny amounts of cannabis oil, since it's difficult to purchase cannabis here-I've only been able to eat certain foods, but I can still eat spicy Thai fish.

I did think that once you get used to eating the chili sauce, that your tastebuds adjust and you would need to increase the intensity over time to keep getting that taste thrill.
That cannabis oil is quite something isn't it. I use it for anxiety and put the balm on aches, pains and spots. They say that it also stimulates the NK1 cancer killing cells that are part of our immune system. The world needs to get over the whole marijuana hang up thing and grow up so that we are free to use CBD if we so choose.

Hot sauce, peppers, and other spicy condiments actually stimulates the taste buds. I like spicy. If the food is good it enhances the flavor, if it isn't you can conceal the flavor if you use enough (too much.)

It sounds like your friends were trying to smother the flavor.

I don't know. He ate a lot of food so it must have been good based on that. But I guess if you get used to a certain thing (in this case taste) that is what you expect or seek.

@patchoullijulie I got into the habit of pouring hot sauce on almost everything I are when I was in the army. I still use it on a few things that most people consider odd: eggs, beef stew, rice, etc.

@JimG In boot camp, if it wasn't ice cream or breakfast cereal, it got covered in tobasco

I'm not an aficionados but I went to a thai restaurant and the waiter who was from thailand asked how hot would like my food 1-10 . I said a five and he responded that he ate at a five level and suggested a two which was crazy hot for me but I enjoyed every bite.

Right. The waiter asked us how hot we wanted the curry and we said mild but it was still pretty spicy. But it was a spicy that I could handle. 😀
