Chicken with rice and beans
I made my own chicken broth..
4 chicken legs
Half a large sweet onion
2 cloves of garlic
1 tablespoon salt
1 tablespoonBells seasoning which includes sage, thyme, oregano, ginger, pepper..
A splash of white vinegar
Bring to a boil, and simmer for two hours.
Bring to room temperature and refrigerate overnight then skim off the fat..
For the chicken and rice:
Saute one can of whole kernel corn and half a sweet onion..
Add a dash of salt and black pepper.
Add 1 Chipotle pepper, finely minced.
Then add two cups of white rice, and cook for a few minutes.
Add 1 tablespoon of Bell's seasoning..
Add 3.5 cups of chicken broth..
Add 1 can of kidney beans, drained and rinsed.
Bring to boil.
Add 3 plum tomatoes and the deboned chicken on top... Do not mix...
Simmer 15 minutes, covered, turn off heat, then let it sit for ten minutes...

My fave way to make chicken stock is to use the bones & drippings from a roasted chicken. I usually keep the bones/drippings in the freezer in a gallon sized ziploc till i accumulate enough to fill the bag then stew a pot of broth. It is a 2 day process (day 1 to simmer for a few hours, strain, & put in fridge, day 2 to remove the hardened fat, divide the stock, & cook) but really worth it.
looks good. my wife does a similar dish: butter chicken with rice. but she does it the easy way. from costco: jar of butter chicken sauce & a can of cooked chicken breast. comes out as good as anything we've had in restaurants.
Sounds yummy, but what els would you eat with it? Any vegetable?
I usually have a green salad with most meals... Lettuce, cucumbers, onions, tomatoes, etc...
@Cutiebeauty Seems to me that in the US a lot of salad is being eaten with meals. In Europe and Australia we eat meals with vegetables and salad is eaten mainly summertime.
@Jolanta I have corn and tomato in this dish.. aren't those vegetables?
@Cutiebeauty They are indeed, however it is always much more meat than vegetables. I have to try to make it though because it sounds delicious.
