Earlier I promised my hushpuppies recipe. For those of you who are not southerners, hushpuppies go extremely well with seafood. If you will try it, you will like it! Here goes:
Mickler’s Hushpuppies
1 ½ cups cornmeal mix
1 cup flour
2 packets Nutrasweet or 1 tablespoon sugar
1 egg
½ cup beer
1 teaspoon salt
½ cup shopped onions
1 16 oz. can diced tomatoes (drained)
Cooking oil
Mix dry ingredients and make a well in the center of the mixture.
Beat egg, then combine egg, beer, onions, and tomatoes, stirring well until well mixed. Pour the mixture into the well and stir i the entire mixture well until all ingredients are combined into a paste or dough.
Pour enough oil into a saucepan to fill at least halfway. Heat the oil to 374 degrees or frying temperature.
Use a spoon to dip out the batter and form into rounded balls. Fry in batches until a dark. Turn each ball after about 2 minutes and fry until a dark golden brown. Drain on paper towels. Keep the hushpuppies hot in the oven until all are finished

I haven't done tomatoes. I do include lots of green peppers. and lots of garlic powder, and cumin, and chili powder mix.
And i flat "fry" them. Not deep fried. So more like patties.
