After sleeping most of yesterday after out patient surgery, I roasted boneless skinless chicken breasts wirh garlic, onion & black pepper, diced that up & mixed with celery & fresh green beans that had been blanched, & a ground mustard, olive oil, & fresh lemon juice "vinegrette" for lunch today.
Man, that sounds good. Any time you combine mustard with oil and vinegar, I'm on board.

Changes I made to recipe cause..canned? Blech.
4 boneless skinless chicken breast (enough to at least produce 3 to4 cups diced) seasoned with salt, pepper, garlic & onion (use onion &/or garlic powder if you so choose) & poultry seasoning. Bake at 350, uncovered, until browned & done through. Allow to sit covered in juices to cool 20 minutes. Pour off broth & reserve for another dish. Dice chicken into bite sized pieces.
1.5 lbs fresh green beans strings removed & snapped into bite sized pieces. Blanche them & drain well. Dice 3 to 5 ribs of celery. Mix all ingredients, to this point, well
Dressing: in a jelly jar, with a lid, add 1T dijon & 1T deli stone ground mustard, 2T olive oil, 1/4 c lemon juice, 1/2 t (or to taste) fresh ground pepper, 1/2 t thyme (double fresh if you have it, dried is fine). Screw down lid & shake the dressing until it is well mixed (a couple of minutes). Add to chicken mixture, coating well.
Serve as is, over a mixed salad or as a sandwich. Top with almond slices if you choose (adding sliced almonds to mix can cause them to lose their crunch sitting in the dressing.)
Performance at 7, then pizza and whisky till late. May everyone have a great weekend.

Being a Virginian, I have the utmost respect for that man. I mean I know there are folks who have issues with him, but those tend to be the ones who don't consider the realityies of his era. Thankfully our world has evolved, but no doubt about it, that man was one of the top thinkers of his day.

Of course, there are historical figures you could hate like Stalin or Hitler, but I generally don't "hate" historical figures and I don't understand people who do. It's history and Jefferson was an important figure for us as a country.
I once had a friend who was ultra-right-wing. Fine, whatever. But we were once hanging out by a lake and I mentioned Walden Pond. He snapped at me, saying "F**k that guy. I hope he's rotting in his grave!!!!" Very odd. I said "Hey, I was just saying it was peaceful out here, that's the only reason I mentioned Walden Pond." Hahahah
