What gets accentuated in garlic apparently depends on how it is cooked, or eaten raw as in a salad.
I heard that if you cut it and cook it you should wait awhile before cooking it. I think the nutritional content is damaged more by cooking it right away.
Funny thing about cooking, it enhances or changes some compounds, Yes I've heard you should let it sit after you chopped it up to bring out the best flavor, I'm usually too impatient.

I strive to keep my garlic levels up. What you eat is reflected in the "odor" you exude and clearly therapeutic levels of garlic work. I've made it all these years and never once had a vampire bite me.
