I know the feeling. Although I have gotten very good at one pot meals and because I'm the only one here (army of birds, cats, and dogs not withstanding) eating it out of that one pot.

I did it when I was married and doing it single is much easier and better.

Reminds me of a quote I recently read "I said I do at the altar and have been doing so ever since."
