So, apparently coffee has health benefits I'm not benefitting from because I stopped drinking coffee when I stopped working. And I have coffee in the house. But I don't drink it black, or sweet, and I'm avoiding dairy. So my kid says "nut milks." Smart kid. She had a magazine at her house and one of the articles is how to make nut creams. After I got home I did some additional research and decided to make cashew cream. I love the texture of it and it tastes good. We will see how it goes tomorrow when I add it to my cold brewed coffee. Here is the recipe. [thekitchn.com] It was kinda fun to make, and later this week I am going to make a savory cashew cream and see what I can add it to. Having fun in semi retirement.
