I made some BBQ chicken thighs with carrots and broccoli today... I only had a little bit of BBQ sauce left in the bottle so I had to improvise a bit... I added a little white vinegar to the bottle and shook it up and poured it over six small chicken thighs in a large bowl... Added a squirt of ketchup and mustard, a little more vinegar and some Franks Red Hot cayenne pepper sauce... Tossed it thoroughly until the chicken was coated well... Refrigerated for a couple hours then baked at 450 degrees on a slotted bake pan for one hour...
For the carrots, I used one pound, sliced them and sauteed them with celery, Spanish onion, and garlic.... A little salt and black pepper...
The broccoli was simply simmered in lightly salted water...
The carrot side was naturally sweet from caramelization of both the carrots and onion and the celery added a very nice flavor note... I liked it very much...

I was running way low on BBQ sauce one time and thinned it out with what I had on hand... Soy sauce and A1 Steak seasoning (I stock A1 for guests and tougher cuts of meat). I added Garlic Ms. Dash, garlic powder and lemon pepper and now that is how I make my BBQ sauce all the time! I could eat the sauce as a side it tastes so good!

I was thinking about adding soy sauce too but when I tossed it all together it smelled great so I went with it... I'll try soy sauce next time...
