Birds can change sex from female to male - this is well-documented and I even observed it once first-hand! If the main ovary is damaged, male hormones take over and the bird becomes male in appearance and in function (though remains chromosomally female.)

But...I don't think that this is possible in the other direction (male to female). Unless...maybe...she was female chromosomally, but had a disease or something damaging her ovary all this time? Maybe that disease or inflammation recently cleared up and she was finally able to produce female hormones. I suppose that could be possible.

Or maybe your neighbor is getting some sweet revenge by sneaking into your house at night. Maybe he's trying to bring you to Jeebus by fabricating a miracle.

The same thing happened with my sun conure named Calbert. He, er, she started laying eggs a couple of years in. She’d have a batch of 4–6 eggs, sit on them, and chitter to them lovingly for a few weeks. I’d toss them when she finally realized they weren’t hatching — and the cycle would repeat. She was obsessed with becoming a mama.
