Well you wouldn't believe or read about But it has happened.
For nearly 4 years now I've been calling this bird, a Peach-Faced Parrot, Henri Le Merde, because the breeder informed me he was DEFINITELY a Male.
This morning, as per usual, I wake up, uncover 'his' cage to discover EITHER miracles do happen (LOL) OR my Male Parrot has had a very secret Sex Change because there on the bottom of the cage is an egg that was most definitely NOT there when I covered him/her up last night.
So, it looks very much that 'Henri Le Merde' will now have to be renamed as 'Henrietta La Merde' instead....LOL.
Birds can change sex from female to male - this is well-documented and I even observed it once first-hand! If the main ovary is damaged, male hormones take over and the bird becomes male in appearance and in function (though remains chromosomally female.)
But...I don't think that this is possible in the other direction (male to female). Unless...maybe...she was female chromosomally, but had a disease or something damaging her ovary all this time? Maybe that disease or inflammation recently cleared up and she was finally able to produce female hormones. I suppose that could be possible.
Or maybe your neighbor is getting some sweet revenge by sneaking into your house at night. Maybe he's trying to bring you to Jeebus by fabricating a miracle.

You seem a little shell shocked. I guess the yolk's on you. But look on the sunny side. Henrietta is bisexual. Very trendy these days. You should scramble to get yourself a meeting with the renouned egg expert, Al Bumen. He's a little hard boiled but tasteful.
One could be quite correct in saying you cracked a few very good yolks there....LOL.

The same thing happened with my sun conure named Calbert. He, er, she started laying eggs a couple of years in. She’d have a batch of 4–6 eggs, sit on them, and chitter to them lovingly for a few weeks. I’d toss them when she finally realized they weren’t hatching — and the cycle would repeat. She was obsessed with becoming a mama.
Well at least 'Henrietta La Merde can LEGALLY claim the right to having a COMPLETELY Virgin Birth since there IS NO male parrot anywhere in or around my house.....LOL.
