I'm not sure whether Michelle Pfeiffer qualifies, considering that she's still relevant and attractive today, but she's one of my favorites. Also, as others have said, Lauren Bacall, who had such poise and style and beauty, in addition to being such a great actress.

As for males, Humphrey Bogart had a certain quality I liked, a confidence in his presence, a quiet charm. And Kirk Douglas showed such masculinity in his roles, a real tough-guy persona, the sort of guy who seemed to be the quintessential "man's man."
