A conversation earlier made me think of how lately I've been wanting to recreate the dishes and treats of my childhood. One of the exotic treats I have experimented with is rice pudding. It's a simple recipe using rice aka forbidden rice, a more nutritious form of rice. I get my rice from an organic store but I think you can buy it online as well. Alternately, you can use brown rice. The authentic sweetener in this is palm but you can substitute with other sweeteners or not use any if that is preferred. I use coconut . The traditional recipe requires full fat coconut milk (the canned form) but you can use lower fat coconut milk (canned), and probably any kind of plant milks. It just won't be authentic but who cares, especially if you don't know what the authentic recipe tastes like. This is delicious as a dessert or a breakfast meal.
Added note: this can be served hot or cold. I prefer it hot.

I like this recipe. I tried another from online but the rice was too mushy. The rice needs to be about 3/4 cooked. This is the Indonesian recipe. I believe the Thai one is different.
