Been making vegan enchiladas last 6 months or so. beans, vegan refried beans, tomatoes I've been using the spicy Rotel, spanish rice, onions, spices, chilies, enchilada sauce, tortillas. Really good. Please share some of your favorite vegan dishes as I could always use more variety.

@graceylou Enchilada night tonight! Made green instead of the standard red. They don't look as pretty, but I have high hopes they'll be delicious.

I love making vegan sushi, cream of vegetable soup, pineapple upside down cake, cupcakes, Thai salad rolls (with peanut sauce). Also green beans with black bean sauce.
