Here are my current stats:

wt-205lbs/93.0kg
ht-1.77m

I am developing a periodized program in my head (so far) and am currently on the cardio phase. Now, since my end goal is get down 174 or so lbs, I have started doing interval training as part of my cardio phase (basically I am mixing three days of HIIT with two days of steady state). My question you is, would that be considered overtraining or not, and if not, have any of you guys ever done (as part of building an aerobic base) the above? Much appreciated.

5 days a week cardio or aerobic exercise isn't over training. Interval training is very good body conditioning, but if you're out of shape, add or replace a day with some yoga. Stretching and isometric exercises are key to preventing injury. You need to build your stability muscles as well as your core. If you want to do the stretches at home, the P90x yoga and core day are pretty good, else look at some yoga classes you can jump into.

In my current routine, I've sacrificed high intensity and replaced it with heavy weight. My cardio days consist of about 3-5 miles on the treadmill or elliptical, or sparing at the MMA gym. It's difficult for me to recommend further since I started skinny and my goal was to put on mass.

If you are doing three days of HIIT I'd consider bagging the 2 days of cardio. Either rest or even better, do some lifting. As you drop weight it is critical to maintain muscle mass.
