I don't know if this is a serious trend or just one-off showmanship. After all they still are putting on their great big flashy show. But it's movement in the right direction.
Trend or not at least an innocent being doesn’t have to be sacrificed for their food.
This is an important trend and it needs to gain the respect it deserves. This has been going on for a couple of decades in Seattle. There are even vendors that are not strictly vegetarian but do have vegetarian items on their menu.

For me it’s got to be be egg and dairy free too. Free range eggs, I don’t have much beef with. I have historically had friends in the dairy industry but I still can’t get on board.
@girlwithsmiles That is the vegan approach and I am also on board with that. However, it includes all animal products and honey is still on my list of foods. Another area is GF. One can really be stuck with GF and Vegan but it can be done and more organizations are catering to this area.
@JackPedigo I once served a vegan at a wedding and when I asked him if he wanted wedding cake and he said, no he didn’t want aborted foetuses in his food, showing a complete lack of understanding about eggs I refused to serve him the rest of the night!
@girlwithsmiles Some people can be jerks. In Seattle a vegetarian group called Earth Save started. [earthsave.org] Years later another vegetarian group started. The 2nd group wanted no philosophy just food. They got tired of all the proselytizing from the hard core vegans. Proselytizing actually harms the movement. No one wants to be preached to and made to feel guilty.
Why not? Fashion, fad or future? Only time can tell.
