Almost forgot I add one teaspoon of vanilla to the mix. I put everything in my nutri bullet so it mixes well.

Sounds so easy. Pancakes are my Sunday breakfast and I go through a lot of trouble. Flax seeds, plant milk, different GF pancake mixes, oil, baking powder and maybe a bit of home made applesauce. This sound so easy. What about leavening?

If you need them extra fluffy I put a little apple cider vinegar and a tiny amount of baking soda.
