Just re-tried the oatmeal pancakes. It worked better after a day of sitting and letting the oats absorb the milk. I still want to try it after grinding the oats.

Thank you for this. I have a mac & Cheese which uses nutritional yeast. It doesn't seem to work right so I add some Daiya shredded cheese (and some vegetables as well). I copied the recipe and will add it to my listings. However, there are nor amounts. My late partner was a super cook and everyone wanted her recipes. Problem was she went by feel. finally a son got her to actually measure the amounts and write them down. Whew, now I have something to go by.
I made the oat pancakes this morning and lets say it has potential. I have a mini-osterizer and ground the oats a bit. The texture is still rough so next time I will ground them more. Also, I have an electric griddle so the recipe needs about a TBL of oil. It also came out a bit soupy so next time I will make it a day ahead and let the oats soak up all the liquid. Finally, baking soda and salt or vinegar rises while the mixture is liquid. Baking Powder and salt rises as it heats so I think (correct me please) next time I will use B. powder and salt (or both).
