Try this out...
Fried eggplant with sweet basil marinara sauce...
I made this recipe last week for the first time.. I'm always thinking of different pasta sauces...
It's pretty simple but tastes great.. If you like basil..
So, start with two medium onions, chopped, in a hot pan with a little oil, salt and pepper.. Saute until caramelized well... Add six medium fresh ripe tomatoes, chopped... Saute five minutes then add a little water or broth to desired consistency... Add a palmful of dried basil, I use Badia, a pinch of oregano and one tablespoon of sugar... Simmer until red foam forms on top and continue for another five to ten minutes...
Sauce is finished..
Eggplant is simple... Peel and slice into quarter inch thick medallions... Dredge in plain white flour.. Preheat a frying pan, with a touch of oil. Fry eggplant until crisp on both sides.. A few minutes each side...
Top with sauce.
Finito.. Enjoy
