Homemade Seitan slices with broccoli and carrot on rice.
Mix well and knead: 1 1/2 cup vwg, 2 minced mushrooms, 1 tbsp dried garlic, 1 tbsp dried onion, 1/2 tsp pepper of choice, 1/2 tsp vegemite or other flavor paste, 2 tbsp oil, 2 tbsp amino, 1 cup water.
Pinch golf ball-sized bits off, roll and then squish flat on prepared baking pan.
Bake about 30 minutes on each side at 350f, or until golden.
Then simmer about 30 minutes in 4 cups of double flavored veg broth.
Let them tighten up in a closed container, with broth, in the fridge overnight.
Slice and reheat!
I discovered seitan a few months ago when I found a container of vital wheat gluten in my pantry and wondered what I would do with it. I googled it, found a recipe and was pleased with the results. I like your recipe better, I will try that soon.

@confidentrealm vital wheat gluten is basically flour rinsed until mostly protein remains. Some people call Seitan "wheat meat". My allergy friends avoid my menus since I use a lot of gluten and soy. Many fake meats in the grocery are usually vwg or soy, or pea protein based.
@confidentrealm When I was making bread I had a few recipes that called for VWG. Vital Wheat Gluten is the natural protein found in wheat. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. Many people are not familiar with it, it was just a fluke that I had decided to hunt it down and use it. Then I got rid of the bread machine and forgot about the VWG until I cleaned out the pantry a few months ago. Being the frugal type I wondered what the heck I could do with it, and a google search led me to Seitan. It was a win/win situation.

@confidentrealm I am not sure, but Bob's Red Mill brand products has VWG, so I am guessing many grocery stores will have it, or health food stores. We have a chain called Fresh Thyme Farmer's Market that carries that brand, also Natural Grocer. I am fairly certain I did not get it at WM because I haven't shopped there in years.
@Desert I can't eat soy either. I really don't feel the need for meat replacement foods.
@confidentrealm I just get super bored with my other plant proteins, so I do Seitan, tofu, curls, tvp, tempeh my quinoa on top of all the beans. (Read I get bored and am very picky)
