Just learned this, this morning and had no idea. I usually sprout the beans so I will have to see if this can alleviate the toxin problem.

Holy crap, the traditional method of cooking beans, soaking, rinsing and boiling, I've always done but I didn't know it was terribly important to get the toxins out.

Neither did I. It was a shock but at least n I know to boil them before lowering the heat and cooking them slowly. Apparently, kidneys are the worst.
I use a one pot nowadays. I think pressure cookers help to raise the temperature significantly.

A friend told me that's what she does. But I like to sprout my beans and cook them normally. I am going to have to make some changes.
Instapot solves that problem.

@MissKathleen yes I read the article. The instapot is a electronic pressure cooker. Uses high pressure and heat to cook beans fast, has recommended minimum times for kidney beans because of their toxicity when undercooked. I love mine, use it all the time.
Wow. I'm shocked having eaten them for years.

Tell me about it. Many are just worried about the gas. This is on a whole different level. However, they are still a major source of protein and other important nutrients. We just have to be more aware.
