I usually split the difference with water proportions; quinoa is very versatile and protein dense. SOME people who don't tolerate wheat WELL can enjoy this food. I cook for a client who AT THE MOMENT needs to gain weight. (I can lose it fast too, no one feels sorry for us, yet this is a real issue!). This is one of the things I add to his veggies to help him feel better and maintain his weight.

Quinoa is a great substitute for recipes containing Bulgar. Tabbouleh is one good example.
