Fed the troops (3 kids and my Mom)... yuca boiled with garlic sauce and two pans of whatever was in the fridge roasted in olive/coconut oil, salt & pepper and turmeric.... plus everyone picked a song to hear during dinner... at least they are #vegan when I cook, and love it. There musical choice can be an entirely different post
Garlic sauce? Recipe please!
Super simple… Chopped up about 10 cloves of garlic and sautéed them in a mixture of coconut oil, olive oil and a lump of earth balance vegan butter. I stretched the whole mixture with vegetable broth to be sure there would be enough… Himalayan pink salt and pepper to taste... Sauté slowly, you want to soften the garlic but when it browns it goes bitter. This was done without measuring anything because I just let it rip in a cooking frenzy so you can easily adjust it however you see fit note: I would have added some herbs but my mother cannot have the vitamin K in greens.... This is why so many of my dishes are tilted towards the yellow and red vegetables hope you try it and post it

It was... yuca is my fad of the moment... always looked like a freaky root that I wouldn’t know what to do with, I’m expanding my vegan repitour ... thank you, this was super easy, post it if you try it
@ArdentAtheist, at home I have a Mexican grocery at the end of my block. I look at all the different produce but I wouldn't know the first step in preparing it.
