05/09/2018- Diet Diary- What a day. Turned putting a few vegis in the oven to roast into a 4 hour kitchen workout. Had to set up 3 trays full of vegis, large one of cauliflower, one of carrots and squash seeds, which had to be boiled in salt water first. Then the 3rd, a pan of butternut squash with a molasses/balsamic vinegar sauce, which had to be stirred up in a skillet.
Fixing all these pans of stuff so they could go into the oven at the same time, rather than one after the other kept me busy even before I noticed a huge amount of condensation on the "ceiling" of the fridge. Pulled out stuff so I could wipe it away, leading to seeing there was ice on the air inlet at the top, which I knocked off. Then I saw that the vents between fridge and freezer sections were full of ice as well. Cleared the top shelves, tried using hair dryer to melt ice. It was working VERY slowly. Knew I had to work from freezer, letting it thaw so all the freezer food had to go into ice chests.
While defrosting, decided to check the pan under the fridge, in case too much water was draining down into it. Opened the bottom and it was a dust bunny, dust kitty convention under there. I thought it had been less than a year since I cleaned under the fridge but time does fly. Ended up on the floor, off the floor, in front, then in back, moving fridge back and forth, taking the back off, running a 2 foot long brush back and forth between coils under the fridge. During which, stopping every 10 minutes to stir the roasting vegis.
Finally, everything defrosted, food all put back into freezer and squash pureed, I quit and ate more carrots and roasted squash seeds. Unfortunately, eating got away from me, went 120 calories over my goal of 1270. It also doesn't bode well that a fair bit of salt was consumed, particularly in those squash seeds, which came out great. Missed my walk today as it was already well into darkness before I got everything back in the freezer. Think I'll turn in.
I always postpone cleaning the fridge and the the freezers well beyond when it should be. It's a tedious job. Sounds as if you have got a nice lot of roast veggies though. I am hoping to get a butternut squash today. I had a good day yesterday - 953 calories, so under my eating day allowance of 1000. Today is a fast day so it will be veg soup for lunch and a green salad for supper with an egg if I have been good.
