02/10/2018 - Diet Diary- For anyone to share their diet day in a comment below.
Sometimes I'm late to make these, so please feel free to do so yourself. Just copy this preamble and change the date.
Popping in quickly before getting to bed. Going on a little road trip tomorrow. Eating went well today, under 1000 calories. Supper was "Slaw-ghetti" in the crock pot. Use shredded cabbage, some Italian sausage (we used turkey) and a can of spaghetti sauce and cook. Was really quite tasty, the cabbage was not soft-soft, just slightly crisp-tender and did not give a strong cabbage flavor to the dish. Will make it again.
Tomorrow, making a cheesy enchilada casserole, but subbing in cauliflower "rice" for white rice. Quite a bit of cheese in the recipe but cutting it down a bit. Will be interesting to see how it turns out. When this friend comes to visit, we like to try out new recipes and she does more keto than I do so we often go for carb-light recipes. She will be leaving Thursday morning so will get myself back on schedule after that. Take care and good eating everyone.
