20 March 2019 -Diet Diary- First day of spring and it actually felt like spring. I spent 3 hours on a ladder, trying to prune some of the excess growth out of my 30 year old pear tree. Hard to tell where I even cut but I have a brush pile to prove that I DID trim it. My feet are not happy, ladder rungs are not made for comfort.
For supper I had the stew I made from the leftovers of the corned beef and cabbage "dinner" I made. It turned out GREAT! Of course, I could probably never recreate it. It was based on the vegis and beef broth leftovers. I added tomatoes, more onions, kale, red peppers, 1/2 bag of mixed vegis, smoked sausage, canned navy beans, chia seeds and Mrs. Dash type seasoning. VERY thick and VERY tasty!! Plus, I did get it put into the recipe analyzer and it came out to only 97 calories in a 1 cup serving. Of course, I ate two.
I finished the day around 1250, salt kind of high but the soup and 2 oz. of corned beef was gonna do that. I did hold back the remaining beef, only about 4 oz of it, to eat by itself. I will be eating stew for several days. Took some over and ate with the neighbor tonight but still plenty left. Good thing calorie count is relatively low.
That sounds delicious and just the sort of thing to fill you up without too many calories. I know what you mean about not being able to replicate things, though. Quite often the things you throw together out of leftovers come out perfect, never to be seen again!
It really was delicious, luck of the draw mostly. Soup is often like this, just throw stuff into the pot until it looks like enough and see if it comes out good/not so good. I can sometimes recreate (or almost) those but this one, because it started with the vegetables left from the corned beef and cabbage dinner and included the seasoning from the corned beef, would be hard to do again.
I spent my early years living with my grandmother. One of the things she cooked maybe once a week, was a little pan of soup made up almost exclusively of leftovers. She NEVER wasted anything, if there was a tablespoon of corn or a slice of meatloaf or a chicken wing left after a meal, it got saved. When she had several of these little bowls with a wee portion in them, she would put them all together. This was, I now believe, kind of a secret pleasure for her.
She did not serve this soup as a meal, there was often no more than a cup of it anyway. She would prepare a normal meal for the family then she would eat her soup. My grandfather would likely not have considered that a "meal" anyway. He liked hearty meals and meat and potatoes was the normal dinner (noon meal) fare with re-fried potatoes and leftover meat for supper. When serving soup to him, Gran pretty much stuck to things like ham and beans. I don't remember ever having broth based soups served as a meal unless someone was sick and got chicken noodle soup, from a can, no less. That remains my go-to comfort food for when I've been sick.
