Question, do you peel the tomatoes first? The first time we grew tomatoes we had a super bounty and made sauce by the quarts. I peeled so many tomatoes my skin turned red due to the acid in the fruit.

I use a Victorio strainer. It removes all seeds and skins. No peeling necessary.

I have been making roasted tomato sauce, and several batches of roasted tomato soup. I have frozen my soup for consumption this winter. Some of the sauce will be used next week, and the rest will be frozen for a later date. I have been eating tomatoes daily for the last several weeks. I love fresh tomatoes.
