Surplus pods are very amenable to being frozen. Just was, dry, bag and freeze. When using it is easiest to slice or deseed whilst frozen.
Do you pickle them or just use them fresh?
I have never pickled them but I would love to learn how.
@JBeberstein Pickling is easy but horribly smelly if you make your own spiced vinegar. Wash your jalapenos and soak them in brine (1lb salt to 1 gallon water) for 24 hours. Drain them. pack them, not too tightly, into jars and pour cold spiced vinegar over them to fill up the jars. Cover tops with clingfilm before putting the lids on. Leave for at least a month before use. You can just pickle them in brine, but I like the flavour vinegar gives them. They will keep a long time, either way.

They look good, I am just planting mine now. It's been too cool this spring for peppers.
I suspect that cold nights are why so many of my peppers stopped growing. I am hoping the next round will be bigger.
@JBeberstein I will be tenting mine for the first few weeks just to get them growing well, my onions have already started to bolt because it was so cool at night this week.
I love hot peppers I haven’t grown any this year.
I love adding a bit of spice to everyday foods. Fresh jalapeño is delicious in grilled cheese. Is there a reason you're not growing any this year?

How will you use them?
I enjoy them raw in sandwiches and salads. I also eat them lightly cooked in my scrambled eggs. I have many growing this year, so I will likely dry some to grind and add to my spice collection.
