This is mine....and it works GREAT! almost can't f*ck it up! LOL
1 3/4 cups all-purpose flour or whole wheat pastry flour
1 teaspoon cinnamon (or nutmeg or all spice or even pumpkin pie spice-- I mix 5 spices together -- 1 tsp of each...and then I have enough for 5 loaves)
3/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup organic raw sugar
---mix dry ingredients in bowl
then add:
one ripe banana blended into a "paste"
1/3 cup melted coconut oil
1/4 cup coconut mylk coffee creamer vanilla flavored (or vanilla almond mylk or any plant-based vanilla mylk)
1 teaspoon vanilla extract
mix by hand until pretty evenly distributed....but will start to get dry so add in 1 1/4 Cup grated fresh zucchini
and then throw in a handful of -- raisins, dried cranberries, dried blueberries, or dried cherries
and then throw in a handful of your favorite tree nut
throw in some shredded carrots if you want also!
Some good combinations are --
Raisin and walnuts work well
Cherries and pecans
Cranberries and almond slivers
Carrots and raisins
dump into loaf pan and bake about 55 mins at 350 F or until a butter knife pulls out clean (longer if loaf pan is glass)
adjust baking time down for cake pans where the batter is spread more thinly or for muffins
Photo is of the "banana paste" that works as a binder ...just blend up a large, ripe banana
@kenriley this recipe is awesome! It's really simple and works great. If you can find coconut mylk coffee creamer in vanilla flavor to use in it for the "milk"...it adds a moistness and more vanilla
@kenriley you betcha!
I have repeat shared to "Food Glorious Food" in case you have added a few niceties! ?
YES!!!!!! This is what I've been looking for
I posted it twice so far under my own posts....I'll go get it and copy/paste it here Hold on.
Definitely check with @ SkotlandSkye, as FBear suggested. She has been making tons of zucchini bread and making everyone's mouth water by posting pictures. She must have some winning recipes.
I love roasted courgettes. Those yellow ones look nice.
Try @SkotlandSkye?
@kenriley And I see from your later post that it resulted in some nice looking loaves. Bon appetit.
