Brilliant. I wonder sometimes if we are too dependent on freezers though. I don't pickle and bottle as much as I used to. I know you do both. What do you think?

I do agree that freezers are a concern --- I have a backup generator....but that is only a temporary fix if something goes wrong. I really, really, really want to convert to solar power....but, damn, the start-up costs are still really high for what I want. I keep hoping those prices will come down as the market gets more competitive.
I'm betting you have more than one freezer??
