Garden end-of-season rattatouille. Or...."anything you have left over" simmered in tomato sauce. This one has peppers, onions, eggplant and tomatoes.

My Dad used to something very similar to go with hamburgers (on the side) perhaps it was a French thing and I just never knew? Looks delicious!

Mom used to make a soup , out of everything left in the fridge , on pay day , just before going grocery shopping .

I'm serving it over wheat pasta. I'm actually going to try to freeze a bag to eat later, as a test. It would also make a pretty good soup or stew.
