I am not keto per se, but had my doctor order a large carb cut due to sky high triglycerides in my blood. Breaking a life long habit of bread, potatos, or pasta with meals has helped tremendously. It was a difficult change, but worth it.
I altered my diet radically after finding out I was genetically high risk for Type 2 diabetes and atherosclerosis. I was already showing early signs despite being fairly skinny. I gave up simple white carbs (white potatoes, white rice, gluten-based pasta, gluten-based bread, popcorn, etc.) and most sugar (I still do organic honey, real maple syrup, whatever sugars are in fresh fruit, etc.). My numbers came down.
My substitutes are sweet potatoes, brown or wild rice, Tinkyada brand brown rice pasta (tastes like the real deal), and gluten-free bread (but only very occasionally).
I also cut out all processed foods, most things with ingredients I can't pronounce, and eat organic as much as I can afford. I don't have the income to shop at Whole Paycheck, so not everything is organic.
I find that by cutting out the starch, I eat more green stuff by default. Sure, it's heavy on the fat and protein, but the same was true when everything was full of bad carbs.
Congratulations. Your health will benefit greatly.
On top of exercise and the help of fibrates, my bloodwork is MUCH better!
