So I'm just getting started on this Keto thing. I'm not sure how well it's going to go, but hopefully I can stick to it! Does anybody have any recipes that I can prepare ahead of time and then bring to work? Being on the night shift seems to add an extra level of complexity to any diet I do, because my food options are so much more limited.
Here's some simple meal ideas I take with me to work.
Deviled egg salad: hard boiled eggs mashed and mixed with mayo and spicy brown mustard and a dash of cayenne pepper.
Chicken salad: canned chicken mixed with mayo and Mrs. Dash Grilled Chicken seasoning.
If you have the option to reheat your meals, turkey sausage (or prefered sausage) sauted with peppers, onions, broccoli, or zucchini.
Veggies to snack on like sugar snap peas, bell pepper strips, etc.
@sarahjustme, that's one of my favs, too. I roll roast beef around baby spinach or spring salad mix. Maybe wrap a thin slice of cheese around the roast beef.
My favorite meal has been cheese, prosciutto, and tomato wrapped around pickle wedges and then I dip it in brown mustard.
