Went out for Thai food and got this great red curry dish. They didn’t have as many vegan options as I would’ve hoped but this was vegan and good… Heat level what they call, “make you cry“. ???????

Made a great stir fry. So much went into this with a whirling dervish of a cooking frenzy. Baby bok choy, kale, red and yellow peppers, ginger, garlic, Portobello mushrooms, carrots, Tumerick, tofu... and more, all over jasmine rice... my daughters ...
