I cleaned out my greenhouse on Sunday - 9/28/2021. The garden season in Wasilla, Alaska was shorter and cooler than normal this year with an early frost, so yield was low for everybody. I hate to waste any produce, even if it is not fully ripe. So I stayed up all Sunday night making green tomato chutney...
Would that not give you dysentery? ...since it's green? Perhaps you'll be adding some good stuff and spices so to not have that upset tummy effect? ...or you've done it before and no problems
Tomatoes ripen in the dark. When I was growing up, we always picked the green tomatoes when the first frost was forecast and wrapped them in tissue paper (the kind used in gifts) and put them in cardboard boxes until they were ready. This gave us ripe tomatoes for up to a month after harvest. There is also always “Fried Green Tomatoes” to be enjoyed.

MsKathleen - I ripen many tomatoes in a single layer covered with a towel. Never liked fried green tomatoes but green tomato chutney is delicious so I look forward to making it every year. Goes great with curried lamb shanks... and makes great holiday gifts.

I've never heard of swerve sugar substitute. What is it made from?

@FrostyJim thanks I'll have to try it. It looks like Amazon sells it. They do and I bought a three pack that includes brown sugar and powdered sugar. That means I can make most anything with it. I've been using monk fruit sugar because of its low glycemic but this sounds even better.Thank you.
It can cause diarrhea in larger anmounts...self-limiting, Lol! Good for baking though.
