@MichelleGar1 You need street directions to my fabulous estate to get it warm off the skillet? I like to make a potato omelet, aka a Spanish tortilla.
Mexicans have a totally different idea what a tortilla is.

@MichelleGar1 Knowing you, you'd prefer huevos a la Mexicana. Act now! I have one jalapeño left in the house. It is a dish with all the colors of the Mexican flag.

@MichelleGar1 The local Mexican restaurants offer BOTH huevos rancheros AND huevos a la Mexicana. Additionally, they have other versions of scrambled eggs with different stuff, including cactus leaves and sausage.
To me huevos rancheros is eggs poached in salsa with refried beans on the side with a steamed tortilla on the side to push it all around on the plate. Different regions of Mexico have different names for food, making all confusing for this gringo.
@WonderWartHog99 Where I'm from it's Sunnyside eggs with tomatoes, onion's, jalapenos on top of two side by side corn tortillas and beans are on the side! I already finished making carne picada taco's and chili con queso! All yummy! A perk of being at home! I get to cook!
I love the wreaths with the beribboned eggs dangling down.
