Leftover eggplant popped in the oven with tomato sauce, homemade vegan parmigian and vegan mozzarella served with a salad. I still have some left so probably tomorrow’s lunch.

Jackfruit isn’t fake pork, it’s real jackfruit. I don’t want to be constantly comparing my food to food I don’t want. My chickpea salad is to good to call it fake tuna, it’s a chickpea salad🌱☯️
